Creamy-Crunchy Coleslaw

Ingredients

  • 1 cup plain nonfat yogurt
  • ½ cup mayonnaise
  • 2 Tbsp. cider vinegar
  • 1 lime, juice and zest
  • ½-1 tsp. red pepper flakes
  • 1 24-oz. coleslaw mix
  • 2 cups shredded carrots
  • 1 sweet red bell pepper, cut into narrow strips
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  • Combine yogurt, mayonnaise, vinegar, lime zest and juice and red pepper flakes in a mixing bowl.
  • Add coleslaw mix, bell pepper and carrots; toss to coat.
  • Season to taste with kosher salt and pepper; refrigerate covered until ready to serve.
