Creamy-Crunchy Coleslaw
Ingredients
- 1 cup plain nonfat yogurt
- ½ cup mayonnaise
- 2 Tbsp. cider vinegar
- 1 lime, juice and zest
- ½-1 tsp. red pepper flakes
- 1 24-oz. coleslaw mix
- 2 cups shredded carrots
- 1 sweet red bell pepper, cut into narrow strips
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Combine yogurt, mayonnaise, vinegar, lime zest and juice and red pepper flakes in a mixing bowl.
- Add coleslaw mix, bell pepper and carrots; toss to coat.
- Season to taste with kosher salt and pepper; refrigerate covered until ready to serve.
