Celebrate Enchilada Day

with these enchilada recipes

May 5 is National Enchilada Day.  As I was looking at various enchilada recipes to celebrate the occasion, I discovered so many different ways to create them. I decided to look up the official definition of the word enchilada, and here’s what I found:

En-Chi-la-da
noun
1. A rolled tortilla with a filling typically of meat and served with a chili sauce.

Yum and no wonder!  Many recipes called for flour tortillas, while others specified corn tortillas; the meat fillings were all over the board, some boasting chicken or beef while others called for seafood… the options are endless. 

In essence, there’s really no wrong way to create or eat an enchilada, and for that I’m thankful!
