Turkey Bahn Mi

Ingredients

Pickled vegetables

1/2 cup rice vinegar

1/4 cup hot water

1/4 teaspoon kosher salt

1/4 cup sugar

1/2 cup each: cucumber matchsticks, shredded carrots, shredded cabbage

 

Turkey filling

1/3 cup mayonnaise

1 tablespoon sweet chili sauce

1-2 teaspoons sriracha

1/2 teaspoon garlic salt

juice from one lime

3 cups diced, cooked turkey breast

2 (12-inch) demi baguettes

2-3 tablespoons chopped cilantro

 

Instructions

In a medium glass bowl, combine the rice vinegar, water and sugar; stir to fully dissolve the salt and sugar.

Add the shredded cucumbers, carrots and cabbage to the vinegar mixture (brine) in the bowl. Let the veggies rest to pickle for 25 to 30 minutes.

Preheat the oven to 300 F.

Slice the demi baguettes in half and remove some of the soft bread at the center of each to create a small trough for the sandwich filling.

Toast the baguette for five to eight minutes in the oven.

In a medium mixing bowl, prepare the filling by combining the mayonnaise with the sweet chili sauce, sriracha, garlic salt and lime juice. Add the diced turkey and gently toss to combine.

Place half the turkey and half the veggies into the well of each toasted demi baguette, top with cilantro.

Slice each sandwich in half and serve at once.
