Fresh Veggie Sandwiches with Bacon

Ingredients
Boursin spreadable gourmet cheese, garlic and fine herbs flavor, 5.3 oz., softened at room temperature
4 slices hearty grain and seeds bread, toasted, as desired
12 thin slices cucumber
4 thin slices tomato
2 small handfuls arugula, may substitute baby spinach
2 small carrots, shredded
1/3 cup roasted red peppers, drained well and patted dry
1 small handful alfalfa sprouts
4 slices bacon, cooked until crisped, drained well
kosher salt and freshly ground black pepper, to taste
Instructions
Spread the Boursin cheese generously over one side of the four pieces of bread.
Pile the vegetables onto two pieces of the dressed bread, then season to taste with salt and pepper.
Add the cooked bacon; top with the remaining slices of bread.
Slice the sandwiches diagonally in half to make two triangles. Serve at once.
