Apple Pork Chop Skillet

Ingredients

4 boneless pork chops, 1-inch thick, may substitute bone-in pork chops if preferred

1 tsp. kosher salt

1/2 tsp. ground black pepper

1/2 tsp. poultry seasoning

1/2 tsp. smoked paprika

1-2 Tbs. vegetable or canola oil

1 cup chicken broth

2 cloves garlic, minced, or to taste

3 Honey Crisp apples, cored, quartered and sliced into 1/4-inch slices, if you prefer a tarter apple, substitute Granny Smith apples

3 Tbs. pure maple syrup

Fresh sage leaves or fresh thyme sprigs for garnish, optional

Instructions

Pat the pork chops dry on each side using paper towels.

In a small bowl, combine the salt, pepper, poultry seasoning and smoked paprika.

Using your fingers, rub the prepared seasoning onto both sides of each pork chop.

Meanwhile, in a large skillet (I prefer a 12-inch skillet) preheat the oil over medium-high heat. When the oil is hot, and working two at a time, add the seasoned pork chops to the skillet. Brown on each side, four to five minutes per side.

Remove the chops to a platter and carefully wipe out the skillet with paper towels.

Reduce the heat to medium. Stir in the chicken broth and garlic to the skillet, then return the chops, overlapping them a bit if needed.

On top of the pork chops, gently place the apple slices; drizzle with maple syrup. Cover the skillet with a lid (or use a sheet of foil) and simmer for 15-20 minutes.

The pork chops should register 145 F. at the center when tested with an instant-read meat thermometer.
