Grilled Fruits & Veggies

grilled vegetables

Summer’s bounty brings tasty fruits and vegetables to grocery stores and farmers markets. Kansas gardens yield harvests of strawberries, peaches, tomatoes, peppers and squash that can be enjoyed raw, sautéed or canned.

Another way to enjoy healthy and delicious veggies and fruits is to add them to your cookout alongside traditional main dishes such as grilled or barbecued beef, chicken or pork. Fruits and vegetables caramelized on the grill add color, taste and fiber — not to mention lots of nutrition — to summer meals and desserts.

You can add tropical fruits like pineapple, banana and kiwi to a kidfriendly grilled fruit kebab for even more fun and flavor.  Grill peaches or other stone fruits and serve alone or with ice cream for a delicious summer dessert.

Think beyond the traditional vegetable kebab. Grill a bell pepper, some tomatoes, squash and zucchini and add to cooked linguine for a tasty side dish or lighter entrée.
