Kansas Farmers Supply Homegrown Products to Restaurants
For many Kansas restaurant chefs, sourcing homegrown ingredients from local farms is a natural choice. These collaborations honor community and connection, while diners enjoy delicious meals that support local producers.
Papa Baldy’s
McPherson
At TOAST, a gourmet eatery in Pittsburg, guests are presented with seasoned Papa Baldy’s popcorn as a complimentary appetizer. The restaurant, which prides itself on using locally sourced ingredients, also sells the corn kernels by the bag in its market retail area.
Since 2017, Papa Baldy’s, a family-owned and operated farm, has shipped packaged corn to all 50 states, including retailers in Kansas, Missouri and Oklahoma. Many people prefer the mushroom popcorn variety to traditional butterfly popcorn because it produces a robust shape when popped, and added flavoring easily coats its exterior.

Shiloh Vineyard & Winery
WaKeeney
In Hoxie, The Elephant Bistro & Bar prefers to support local producers by sourcing a long list of ingredients and products from Kansas-based businesses. The restaurant, known for its elevated cuisine, collaborated with Shiloh Vineyard & Winery to create its signature Petite Elephant Wine.
Shiloh Vineyard & Winery produces wines from cold-hardy grapes grown on site, ranging from dry reds to dessert wines. For example, their Bourbon Barrel Reserve dry red wine was aged eight months in bourbon barrels sourced from Boot Hill Distillery in Dodge City. Wine lovers are welcome at its tasting room six days a week. Additionally, the vineyard is an official Harvest Host for overnight RV guests.

Kan-Grow Hydro Farm
Wichita
If you’ve dined at nearly two dozen Wichita and Andover restaurants or bars with chef-prepared menus, you’ve likely eaten organic vegetables, fruit, or edible flowers sourced from Kan-Grow Hydro Farm. The Belmont, FioRito Ristorante, Lottē, and other eateries feature the farm’s produce and pickled vegetables in their menu selections. Odd Fellow Hall, an event venue, partners with Kan-Grow Hydro Farm for its catering services.
Kan-Grow Hydro Farm’s roots began with growing sprouts and eventually evolved into a larger organic farm in 2011, operating with a wholesale model. Now, in addition to supplying chefs with produce, the farm retails its sprouts and pickled vegetables at GreenAcres Market.
