Artisan Bakers Fulfill Knead for Hand-Crafted Bread in Kansas

The smell of warm, freshly baked bread evokes a feeling of comfort and, for many Kansans, a sense of home. 

Kansas, the Breadbasket of the World, deserves its reputation. More than 15,000 Kansas farmers produce an average of 334 million bushels of wheat a year on approximately 7 million acres, which accounts for a fifth of all the wheat grown nationwide and is enough to bake 36 billion loaves of bread, according to Kansas Farm Food Connection. 

From honing recipes to serving bread, the following bakeries build community with every loaf. 

Radina’s Bakehouse

Visitors to Radina’s Bakehouse can watch the artisanal baking process as they stand in line to purchase a baguette, cinnamon bread or San Francisco-style sourdough. Dressed in white, the bakers’ movements appear synchronized. 

The bread varieties, made from Kansas wheat, are used to prepare lunch menu sandwiches.

Seraphim Bread
Salina

Since 2018, visitors to downtown Salina have flocked to Seraphim Bread for handmade bread. Owner Tyler Gallagher uses Heartland Mills flour when baking a selection of sourdough and wheat rounds. 

While his Scotch Roll, sweet rolls and muffins are popular during early morning hours, the midday sandwiches prepared with artisan bread stand out. Brötchen Hard Rolls and beef and cabbage bierocks are German-inspired classics.

Baker Sharon Entz at Crust and Crumb is intentional about her bread-making process often adding Kernza wheat, a perennial sustainable grain grown at The Land Institute in Salina, in her sourdough recipes. She grows and mills Turkey Red Winter Wheat, a grain planted in Kansas since the 1870s. Her baking style creates the bread’s crusty exterior and flavorful interior.

Customers know to expect a variety of breads every Saturday morning, which also include baguette, ciabatta and pastries.
