March is National Noodle Month and what better time for this comfort food to take the stage.  Here are some fun noodle facts to amuse and amaze you:

  • Noodle consumption spikes at least 20 percent during the colder months, and also during Lenten season when many of us are preparing more meatless meals.
  • Did you know noodles contain eggs while nearly all other dry pasta shapes do not?
  • In Japan, it is not considered bad manners when slurping as you eat your noodles. Slurping signals appreciation for the meal your host has prepared in your honor.  So my kids were actually thanking me all this time?

Because noodles are the ultimate cure-all for a broken heart, why not whip up a batch of homemade noodles to add to that pot of chicken noodle soup you’ve been meaning to take your neighbor who just lost her sister? Homemade noodles are tender, super easy to make, and they take a pot of soup over-the-moon in flavor and texture.

3 Quick Tips for Making Homemade Egg Noodles

  1. Be sure to let your dough rest for 10 minutes before rolling it out. Fighting dough when you roll it out only makes for a tough texture. Letting it rest before you attempt the rolling lets the dough relax….then it cooperates fully.  (Sounds a lot like a husband!)
  2. If you’re going to dirty a bowl to make a batch of noodle dough, why not make several batches and then freeze them?  Noodle dough freezes well and you can freeze it as a ball of dough or after you make the noodles.
  3. I LOVE to use my pizza cutter to slice my noodles – it works so SLICK!!
