Spinach, Blueberries and Corn Salad
Ingredients
3-4 Tbsp. Spicy Lemon Vinaigrette
¼ cup diced red onion
1 cup cucumber slices
1 cup frozen corn, thawed
1 cup fresh blueberries
1-2 cups baby spinach
Instructions
Place dressing in the bottom of a wide-mouth quart jar; top with red onion, cucumbers, corn, blueberries and spinach, packing tightly. Seal and refrigerate until needed.
Serves two.
