Russian Tea Cakes
Ingredients
1/2 cup butter, softened
3 tablespoons honey
1 cup all-purpose flour
1/2 teaspoon kosher salt
1 tsp. vanilla extract
1 cup finely chopped walnuts
1 cup confectioner's sugar
Instructions
In a large mixing bowl, cream butter with honey and vanilla. Combine flour and salt with walnuts and add to butter mixture, stirring to combine. Chill dough for 1 hour.
Preheat oven to 350 degrees F. Roll dough into 1-inch balls and roll in powdered sugar, then place balls onto an ungreased cookie sheet, 2 inches apart. Bake, uncovered, for 15-20 minutes, or until edges are golden brown. Roll in powdered sugar while still warm, then again when they are completely cooled.
