Ranch Roasted Potatoes
Ingredients
1 1/2 lbs. small yellow or red potatoes, skins on, cut into 1/2-inch thick wedges
Olive oil, for tossing
1-2 Tbs. dry ranch dressing mix, to taste
Instructions
Preheat the oven to 400 F.
Place the potato wedges into a large mixing bowl; add a good drizzle of olive oil and toss well.
Sprinkle the dry ranch dressing mix over the potatoes and toss again. Spread the seasoned potatoes evenly over a large, rimmed baking sheet.
Roast the potatoes, uncovered, for about 15 minutes, or until fork tender, tossing the potatoes halfway through the baking time.
