Oven Eggplant Pizzas

Ingredients

  • 1 large eggplant, sliced into 1" thick rounds
  • kosher salt and freshly ground black pepper, to taste
  • ½ cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup grape tomatoes, sliced in half
  • 1/2cup diced red onion
  • 1 cup pepperoni slices, cooked sausage crumbles, Canadian bacon
  • red pepper flakes, sprinkled on to taste
  • 1/4 cup fresh basil leaves, torn, for garnish after baking pizzas

Instructions

Preheat oven to 400° F. Place eggplant rounds onto a greased baking sheet and season to taste with salt and pepper; bake, uncovered, on center rack for 20 minutes.

Remove eggplant slices from oven and spread each round with pizza sauce, adding additional pizza toppings as desired. Set oven to broil setting and place baking sheet about 6" beneath broiler for 1-2 minutes, keeping an eye on the pizzas, so they don’t burn. Broil until cheese is golden and bubbly.

Remove from oven and top with fresh basil, as desired.
