Holiday Pistachio-Cranberry Goat Cheese Logs



4 oz. log goat cheese
1/3 cup finely chopped pistachios 
2 Tbs. dried cranberries, finely chopped 
1 Tbs. honey, warmed a bit
tiny pinch of red pepper flakes


Combine pistachios with cranberries, honey and red pepper flakes; place mixture onto a large plate, spread into a single layer. 

Gently roll goat cheese in the prepared pistachio mixture, pressing it into all sides of the goat cheese log.

Serve with toasted baguette slices or your favorite crackers.
