Date Pinwheels
Ingredients
1 cup unsalted butter, softened
2 cups packed dark brown sugar
3 large eggs
1 tsp. vanilla extract
4 cups all-purpose flour
¾ tsp. kosher salt
1/2 tsp. baking soda
Filling
2-1/2 cups chopped dates
1 cup sugar
1 cup water
1 cup finely chopped pecans
Instructions
In a large mixing bowl, beat butter with brown sugar until light and fluffy; beat in eggs and vanilla. In a separate bowl, combine flour with salt and baking soda, then gradually add to the creamed mixture; mix well. Divide dough into 4 equal portions, then refrigerate for 8-10 hours.
In a large saucepan, bring the dates, sugar, and water to a boil; reduce heat to medium and cook mixture until nicely thickened, approx. 15 minutes. Cool completely, then stir in pecans.
Roll each portion of chilled dough between two sheets of wax paper into a 12 x 9 inch rectangle, then refrigerate for 30 minutes. Remove wax paper; spread date mixture over dough and roll up starting at the long side of each rectangle. Wrap each roll in plastic wrap and chill for 3-4 hours, or until very firm.
Unwrap rolls and slice each one into ¼” slices. Place slices 1” apart onto greased baking sheets. Bake in preheated 350 degree F. oven for 10-12 minutes or until golden brown and set. Remove to cooling racks to cool.
