Chocolate Crinkles
Ingredients
1 cup unsweetened cocoa powder
1 1/2 cups granulated sugar
1/2 cup vegetable oil
4 eggs
2 tsp. vanilla extract
2 cups all-purpose flour
2 tsp. baking powder
1 tsp. espresso powder
¾ tsp. kosher salt
1 cup confectioners’ sugar
Instructions
In a large mixing bowl, using an electric mixer, beat together cocoa powder, sugar, and vegetable oil; add eggs, one at a time. Beat in vanilla and combine well.
In another bowl, combine flour with baking powder, espresso powder, and salt; add flour mixture to chocolate mixture and mix just until combined; chill dough for 8-10 hours.
Preheat oven to 350 degrees F. Roll dough into 1-inch balls, then roll each ball in confectioners’ sugar and place onto greased baking sheets. Bake cookies for 10-12 minutes, allowing them to rest on baking sheets for 2 minutes before transferring to cooling racks.
