Chilled Cucumber Soup

Ingredients

  • 3 cucumbers, peeled, seeded and coarsely chopped
  • ¼ cup fresh Italian parsley
  • 4 scallions, chopped
  • 2 cloves garlic, crushed
  • 1 cup tomato juice
  • 1 cup chicken broth
  • 3 Tbsp. cider vinegar
  • 2 cups sour cream
  • kosher salt and freshly ground black pepper, to taste
  • red pepper flakes, to taste, optional

Instructions

Place cucumbers, parsley, scallions, garlic, tomato juice, chicken broth and vinegar into food processor bowl and blend well. Pour into large bowl, and whisk in sour cream; season with salt and pepper to taste. Add red pepper flakes, if desired. Refrigerate until chilled, then serve.
