Caramelized Onion and Mushroom Pastries

Caramelized Onion, Mushroom Gruyere Pastries

Ingredients

  • 2 Tbsp. olive oil
  • 1 large yellow onion, thinly sliced
  • ½ tsp. kosher salt
  • 4 oz. button or baby bella mushrooms, sliced
  • 2 oz. grated Gruyere cheese
  • ½ tsp. dried thyme leaves
  • 1 lb. package of frozen puff pastry sheets, thawed
  • egg wash made from 1 egg beaten with 1 Tbsp. water

Instructions

Preheat oven to 400° F. Line two baking sheets with parchment paper.

In a large skillet, heat the olive oil over medium heat. When the oil is hot, add onions and salt, cooking until onions are softened and golden brown, approx. 25-30 minutes. Remove onions from skillet and reserve. To drippings in skillet, add mushrooms and sauté until tender, approx. 5 minutes. Remove skillet from heat and return reserved onions to mushrooms in pan; stir in cheese and thyme; season to taste with salt and pepper, as needed.

Cut puff pastry sheets into 2-inch squares and place onto the parchment-lined baking sheets; brush each square with a bit of the egg wash mixture, then top with prepared onion mixture, in the center of each pastry square.

Bake, uncovered, on center rack of preheated oven, for 20-25 minutes, or until golden brown, rotating baking sheets halfway through baking time. Cool slightly, then remove to a cooling rack. Serve warm.
