Barbecue Chicken Salad Sandwiches
Ingredients
3 cups shredded, cooked rotisserie chicken (or use any fully cooked type of chicken)
1/2 cup mayonnaise
1/4 cup barbecue sauce
1 Tbs. red wine vinegar
1 stalk celery, diced
1/2 small red onion, diced
Kosher salt and freshly ground black pepper, to taste
lettuce leaves
sliced tomatoes
Your favorite buns, pita pockets, or breads, for serving
Instructions
In a large mixing bowl, whisk together the mayonnaise, barbecue sauce and vinegar. Fold in the remaining ingredients, gently tossing to combine.
Place the filling onto your favorite buns; garnish with lettuce and sliced tomatoes and serve.
