Apple Cider Fritters

Ingredients
2 medium (Granny Smith or Ambrosia) apples (peeled, cored, and chopped)
1/4 cup cornstarch
2 cups all-purpose flour
1/3 cup granulated sugar
1 Tbs. baking powder
1 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
3/4 cup apple cider
2 large eggs
2 tsp. melted butter
3-4 cups peanut oil for frying
Glaze
2 cups powdered sugar
1/4 cup apple cider
1/2 tsp. cinnamon
1/4 tsp. nutmeg
Instructions
Peel, core and slice apples into small chunks. Place in a bowl and sprinkle with cornstarch. Stir to coat.
In a large bowl, whisk flour, sugar, baking powder, salt, cinnamon and nutmeg to combine. Add apple cider, eggs and melted butter. Mix together until moistened. Gently fold in apples.
Heat oil in Dutch oven to 350 F. Using a large serving spoon, heap portions of batter into hot oil. Press batter lightly with the back of spoon to flatten. Fry fritters two to three at a time, keeping oil between 325-350 F. Cook until a deep golden brown, about 1 minute per side until cooked through. Transfer fritters to wire rack. Repeat for remaining batter.
Make the Glaze
In medium bowl, whisk powdered sugar, apple cider, cinnamon and nutmeg. Dip warm fritters in glaze. Place on wire rack to drain. Allow to set before serving. Makes 8-12 fritters.
