Pineapple Cilantro Rice
Ingredients
- 1 Tbsp. unsalted butter
- ½ yellow onion, diced
- 1 cup long-grain rice
- 15 oz. can crushed pineapple, undrained
- ¾ cup pineapple juice
- ½ cup water
- 1 tsp. granulated sugar
- ¼ cup minced fresh cilantro
- kosher salt and freshly ground black pepper, to taste
Instructions
Melt butter in a saucepan over medium-high heat; add onion and sauté until softened and translucent, approx. 3-4 minutes. Stir in rice and sauté 1 minute longer. Add pineapple, juice, water and sugar; bring to a boil. Cover and reduce heat to low; simmer for 20-25 minutes or until all liquid is absorbed and rice is tender. Fluff rice with a fork; season to taste with salt and pepper, then stir in cilantro. Serve at once as a side dish or as a bed for seafood, fish, or an oven-roasted salmon!
