Overnight Summertime Oatmeal

Ingredients

  • Base ingredients:
  • ¼ cup dry rolled oats (not instant or steel cut)
  • 2 Tbsp. chia seed
  • 2 Tbsp. plain Greek yogurt
  • ½ scoop protein powder
  • 2/3 cup milk (I use 1% or skim if using unsweetened almond or soy milk, which is thicker, increase to ¾ cup)
  • sweetener as desired: honey, agave nectar, stevia or splenda to taste
  • smidge of salt

Flavor Options:

Berry-Almond

  • ½ cup assorted berries
  • 1 Tbsp. almonds, toasted
  • 1 tsp. honey

Blueberry-Walnut

  • 1/2 cup blueberries
  • 1 Tbsp. walnuts, toasted
  • 1/2 tsp. cinnamon

Instructions

In a tall 20 oz. glass; add the oats, chia, yogurt and protein powder. Add the flavor ingredients of choice. Add the almond milk to cover all ingredients well, stir to combine. Sweeten to taste. Cover and place in the refrigerator overnight. In the morning just remove cover and enjoy! Oatmeal will keep for up to two days in the refrigerator.
