Creamy Cucumber and Tomato Salad

Ingredients

3 medium cucumbers, peeled and thinly sliced 

2 Roma tomatoes, seeded and sliced 

¼ cup red onion, diced 

2 tsp. kosher salt 

Dressing 

1/2 - 1 tsp. dried dill 

1/3 cup sour cream

1 Tbs. red wine vinegar

pinch of sugar

Kosher salt and freshly ground black pepper, to taste 

Instructions

Place the cucumber, tomato slices and red onion into a colander and sprinkle with salt. Put the colander over a large bowl to catch any juices that drain from the cucumbers; set aside for 15 minutes.

Meanwhile, combine the dressing ingredients. Rinse the cucumbers, tomatoes and onions, then pat dry; toss with prepared dressing.
