A watermelon can be stored in the refigerator for two weeks, and sometimes as long as three.
Kitchen Tip
A nicely ripened watermelon should be heavy, with a yellowish underside, indicating that it was left on the vine until just ready to be picked. If picked too soon, the watermelon will be lacking in the sweet flavor we all know and love. Gently smack it with your palm—it should sound hollow when it’s nicely ripened.
