Helpful tips on how to select parsnips and prepare Roasted Root Vegetables with Apple Cider Glaze
Selection
Select smaller parsnips that are firm and heavy for their size, with no soft spots or discoloration. Look for parsnips that are very white, as this indicates a sweeter parsnip. Avoid parsnips that are yellowing or turning brown around the core.
Kitchen Tip
If you don’t have apple cider on hand for this recipe, substitute apple juice. To heighten the flavor a bit, add a whole clove to the apple juice when simmering to thicken into a syrup; remove clove before serving.
