Selection 

Choose a melon without bruises, soft spots, moldy patches and cracks.  Aroma is a great indicator of ripeness - the smell should be sweet and fragrant. 

Kitchen Tip 

How do you know if you have a good balsamic vinegar?  Tast it!  If it's sweet and pleaseant to sip, you've got a good one.  If it is sour and unpleasant, trade up!
