Storage 

Store wrapped in paper towel in a plastic bag in the refrigerator.  Remove plastic band if applicable.  

Kitchen Tip 

Using a sharp chef's knife, cut a sweet potato in half lengthwise, then place each half cut-side down onto the cutting board.  Slice each half into 1 1/2" thick slices; lay slice flat, then cut into 1 1/2" chunks.
