Zesty Ranch Coleslaw

Ingredients

Dressing

1 cup plain nonfat Greek yogurt
1/2 cup mayonnaise Juice and zest of 1 lime
2 Tbs. dry ranch dressing mix, or to taste

Slaw

12-16 oz. package coleslaw mix (packages vary in size depending on brand), chopped finely 
1 cup matchstick carrots
1 red bell pepper, seeds and membranes removed, cut into very thin strips
2/3 cup chopped cilantro, or to taste
1 jalapeno, seeds and membranes removed, minced, optional
Tajín Clásico Seasoning, to taste

Note:
Tajín Clásico Seasoning, pronounced tuh-heen, is a zesty Mexican spice blend made with mild chili  peppers, lime and salt.

Instructions

In a large mixing bowl, add the dressing ingredients, whisking until smooth. (Dressing will be very thick.)

Add the chopped coleslaw mix and remaining salad ingredients to the prepared dressing, tossing well to combine.

Garnish to taste with a generous sprinkling of Tajín Clásico Seasoning and serve.  

Dressed slaw will keep well for up to two days in refrigerator.
