Spiced Maple Nuts

Ingredients

3 cups unsalted, raw mixed nuts such as almonds, pecans and cashews (any nuts will work fine, use your favorites) 

1/4 cup unsalted butter

1/4 cup dark brown sugar 

1/4 cup pure maple syrup 

1 tsp. red pepper flakes 

2 tsp. ground cinnamon 

1 tsp. ground nutmeg 

1 tsp. kosher salt 

Instructions

Preheat the oven to 300 F. Toss the nuts together on a large, rimmed baking sheet, spreading them out into a single, even layer. 

Bake the nuts for 15-20 minutes until golden brown and fragrant. 

Meanwhile in a large, deep skillet over medium heat, melt the butter. Add the brown sugar, maple syrup, red pepper flakes, spices and salt, whisking gently until the brown sugar is fully dissolved.

Increase the heat to a medium-high; add the toasted nuts, tossing them well to coat in the sugar/spice mixture.

Continue to cook the nuts for five minutes, gently stirring constantly until you can smell the sugar caramelizing. 

Spread the nuts over a sheet of parchment paper on a rimmed baking sheet and allow to cool slightly.

Serve warm. 

To store, break up the nuts after they have cooled and store in an airtight container for two weeks.
